Breakfast for Dinner

The Comber family likes to have breakfast for dinner nights. Breakfast is Matt's specialty and sometimes he likes to give me the night off.

This morning Harrison knocked on our door to say "good morning" and told us he made something for us. He brought in an Ikea storage container and told us it was a pizza. The pizza was called a "Macaroni and Cheese" pizza. After we pretended to gobble and swallow the delicious invention, Harrison made a "Breakfast Pizza." Toppings included eggs, sun (yes, he said sun. As in the bright star our planet revolves around), pepper, cheese, sauce, salt, more cheese, special cheese, more salt, and more cheese. What can I say? The kid loves cheese.

The breakfast pizza sounded so good (minus the extra salt) that Matt and I decided to research recipes on how to make such a concoction. The recipes we found were basically the same and I was surprised to see that so many recipes existed.

The recipe I settled on was from Cooks.com which I pretty much followed to a tee. I substituted cooked turkey bacon for the sausage and added bell peppers and onions. I also doubled the amount of cheese per the request of you-know-who. It was AWESOME! For an added bonus: the slices are super filling, so we have leftovers for breakfast tomorrow.
